Happy Birthday!

August is a crazy birthday month at Pinnacle. We have 5 staff birthdays, countless athlete birthdays, and a bunch of birthday parties at the gym! Not to mention August 1st is Pinnacle's Birthday. This year, we were lucky to celebrate our 9th birthday.

As is the tradition in elementary school, at Pinnacle, the team girls normally bring birthday treats to hand out at the end of practice. As these girls spend many hours a week with each other (and our coaching staff), it is only fitting that they want to celebrate their day at the gym as well.

This year, our level 9 and 10 group requested that Hannah and I bring birthday treats that were extra special. Cookies, cupcakes, popsicles... plain. They wanted something that could excite them at the end of a four hour practice! After doing a little research, I found these: Oreo upside down cheesecakes. Easy to make, single serving packaged, and crowd pleasing.

In addition to having great birthday treats, Pinnacle has a fantastic birthday party set up. Private parties include structured and supervised time in the gym with your special group, use of the party room, and paper goods in the color of your choice. PS I found this recipe to make 24 (not 12) cupcake sized treats.

what you need

19 OREO Cookies
2 pkg.  (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 c sugar
1/2 cup  BREAKSTONE'S or KNUDSEN Sour Cream
1/2vanilla
2 eggs

make it

HEAT oven to 350°F.
PLACE 1 cookie in each of 12 paper-lined muffin cups. Coarsely chop remaining cookies; set aside.
BEAT cream cheese and sugar in large bowl with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each just until blended. Stir in chopped cookies. Spoon into muffin cups.
BAKE 20 min. or until centers are almost set. Cool. Refrigerate 3 hours.
REMOVE cheesecakes from muffin pan; discard paper liners. Serve cookie-sides up.
