Artichoke Chicken

Is your schedule busier than ever?  Has the end of the school year knocked your dinner routine flat?  Try this quick and easy meal that is sure to satisfy palates young and old. Serve with fresh fruit and bread to round out your meal.

Yield: my family of 5

4 Chicken breasts

1 Tbsp Olive oil

Salt, pepper, and garlic powder to taste

1 – 15 oz can Petite diced tomatoes

1 – 15 0z can Diced tomatoes with garlic, basil, and oregano (Italian)

1 – 4 oz can Diced green chiles

1 – 15 oz can Artichoke hearts, quartered

1 – 7 oz tub of Pesto

Directions:

In a saute pan (I use my crock pot that is stove top safe), heat olive oil over medium-high heat.  Sprinkle chicken with salt, pepper, and garlic powder.  Place in pan and brown on each side, about 2 minutes.  Add all remaining ingredients.  Stir until pesto is combines in sauce from tomatoes.  Cook in slow cooker on high for 4 hours.
